Fukkurasan Grill Pot
Iga has long made tools called horoku (roasting pans). Used for roasting bancha tea, these tools are highly fire-resistant against direct heat and made possible by the coarse clay of Iga, which absorbs the flame and gently transfers heat via radiant heat.
"Fukkurasan" is a modern version of a horoku, crafted to be easier to use, more delicious, and more authentic for today's lifestyles. Its shape, designed with a focus on functionality and design, is packed with attention to detail.
The ceramic body, which can be used to stir fry, uses far-infrared rays to thoroughly transfer heat to the core of ingredients, while the pointed lid creates the perfect interior for steaming (this is the same principle as a tagine, a pot born in the desert where water is scarce, which rehydrates ingredients and cooks them back into water). The lid features a tobikana (a circular saw) to increase the surface area, and a spiral pattern to expose the clay's natural texture. This enhances the breathable properties of Iga's coarse clay, accelerating water absorption and evaporating the moisture it contains. This not only promotes steam convection during steamed dishes, but also significantly influences the freshness of the food served and the evaporative effect when used as a cold dish.
